Earth to Air is a seven-course, immersive dining experience celebrating the quiet emergence of spring. Rooted in the liminal weeks between Imbolc and the Spring Equinox, this gathering honours the time of the year when the land begins to stir ~ from frost-dark soil to the first breath of green.

Each course showcases the very best of locally grown, seasonal produce, moving from deep, grounding flavours to light, lifted sweetness. Alongside the food, a carefully curated soundscape unfolds ~ not background music, but intentional pairings that mirror the journey on the plate, much like pairing wine with a meal, but with sound. Guests are gently invited to converse in quiet whispers, or to embrace silence if they choose, allowing space for deeper listening and presence. Please note that the menu is offered as a sequence of refined small bites, crafted with the highest-quality ingredients. Dishes will include gluten, meat, and dairy, prepared with care and intention.
